They say that breakfast is the most important meal of the day, well if that is true this is probably the best breakfast you'll have all year, my lemon and blueberry pancakes.
284 g of self-raising flour.
284 ml of buttermilk.
3 full eggs.
3 tsps of baking powered.
3 tbsps of caster sugar.
1 tbsp of vanilla extract.
In a large jug add the buttermilk, eggs and vanilla and give it a good mix using a whisk.
In a bowl add the flour, baking powered and sugar and mix then gradually add the wet ingredients, mixing well to make a batter.
In a large non-stick frying pan add a small knob of butter over a medium heat.
Once the butter has melted add large tablespoons of the batter to the pan and fry for around 3 minutes or till small bubbles appear on the surface of each pancake. Now flip and cook for another 3 minutes or till nice and brown. Pending on the size of your frying pan you will have to do this in batches.
Once done serve with your favourite toppings, bacon with maple syrup, your favourite fruit's or my favourite combination lemon and blueberry.
