STEAK FAJITAS WITH PINEAPPLE SALSA

Prep Time: 5 minutes - Total Time: 10 minutes - Serves 2


This recipe is so good it will have you speaking Spanish.


Fajitas never a bad idea! The fajita kits in the yellow box from the shop are ok but once you have made your own spice mix you won’t buy it again. I always try and have a jar full in the cupboard so I’m good to go.


Fajitas Ingredients

  • 2 sirloin steaks, cut into strips.

  • 2 tbsps of cumin.

  • 2 tbsps of smoked paprika.

  • 2 tbsps of oregano.

  • 2 tsps of chilli powered.

  • Salt & Pepper.

  • 2 red pepper, cut into strips.

  • 2 yellow pepper, cut into strips.

  • 8 spring onions, cut into 1-inch pieces.

  • Juice of one lime.

Salsa Ingredients

  • 1 fresh pineapple, diced.

  • 1 medium red onion, diced.

  • 1 fresh red chilli, diced.

  • A handful of fresh coriander, roughly chopped.

  • Juice of one lime.

Method

  1. Take all the salsa ingredients place in a bowl and mix. Place to one side until you are ready to pile high on the fajitas.

  2. In a jar add the cumin, smoked paprika, oregano, chilli powered, a pinch of salt & pepper and shake to mix.

  3. Get two bowls and place the peppers and spring onions in one and the steaks in the other one. Now add some of the spice mix to each bowl and coat well.

  4. In a very hot frying pan add a splash of oil along with the peppers and onions and fry for a couple of minutes or till they just start to soften. Remove the peppers add another splash of oil and add the steak. You literally only want to cook the steaks for a minute or so as you don’t want to overcook it. Once the steak is done add to the peppers add the lime juice and mix well.

Wrap your fajitas in some warm tortilla and top with some crushed avocado, sour cream and of course the pineapple salsa.
