GREEK LEMON CHICKEN AND POTATOES

Chicken, potatoes, lemon, garlic and olive oil all roasted together until everything melts into each other. The potatoes soak up all the juices from the chicken and dressing and honestly that’s the best bit.

Ingredients
1 small onion, diced
2 tomatoes, diced
1 Bird’s Eye chilli, diced
1 tsp ginger garlic paste
1/2 tsp cumin
1/2 tsp garam masala
1/2 tsp turmeric
Chilli powder (optional)
1 tin baked beans
Knob of butter
Salt
To serve:
Toast or mini naan breads
Fresh coriander
Extra garam masala
Method
Into a saucepan add the onion, tomatoes and chilli with a knob of butter and a pinch of salt. Cook low and slow for around 10 minutes until softened.
Add the ginger garlic paste followed by the cumin, garam masala, turmeric and chilli powder. Stir it through and cook the spices out for a couple of minutes.
Pour in the baked beans, mix everything together and taste for seasoning.
Pile onto toast or warm naan breads, finish with fresh coriander and another sprinkle of garam masala.
