Forget burgers and hotdogs, tacos are the best handheld food ever!
Tender and sticky pork belly, stuffed into a corn tortilla wrap and topped with a pineapple salsa, stay no more.
Easy and quick to make, you’ll be eating within 30 minutes. A total crowd pleaser and a recipe you must try.
Ignredients
300 ml of BBQ sauce.
4 pork belly slices.
50 ml of chicken stock or water.
Salsa Ingredients
220 g tin of pineapple chunks.
1 small red onion, diced.
1 fresh red chilli, diced or sliced.
A handful of fresh coriander and mint, roughly chopped.
Juice of 1 lime.
Method
Put the pork belly slices into a bowl, drizzle with oil and season with salt and pepper. Get a nonstick frying pan over a high heat and fry the pork belly till a nice golden colour on all sides, around 10 minutes.
Once the pork is done remove it from the pan, add the BBQ sauce and water. Mix then return the pork coating in the sauce. Cover and cook over a medium heat for 15 minutes or till reduced and sticky.
For the salsa simply just mix everything together.
Once the pork is ready, slice up and pop into a small corn tortilla wrap. Top with the salsa and give it a drizzle with some of the sauce from the pan. I also like to add some shredded cabbage, onions, carrots and chilli sauce.
