CHICKEN IN A TOMATE AND PEPPER SAUCE

Ingredients

  • 2 boneless and skinless chicken breast.

  • 2 tbsp of flour.

  • The leaves from 1 sprig of fresh rosemary.

  • 1 red pepper, thinly sliced.

  • 1 small red onion, thinly sliced.

  • 400g tin of chopped tomatoes.

  • 1 handful of pitted green olives.


Method


  1. Take the chicken breast and slice lengthwise through the middle, open it up, and then slice it into 2 pieces. Place the flour into a bowl, season it, and coat the chicken in the seasoned flour.

  2. Heat a drizzle of olive oil in a non-stick pan, then fry the chicken for a couple of minutes on each side. At this point, you are just trying to get some color on the chicken. Remove it from the pan and set it aside.

  3. Add another drizzle of oil, then add the onions, peppers, and rosemary. Season and fry them over medium heat for five minutes.

  4. Next, pour in the tomatoes, mix them, and nestle the chicken into the sauce. Leave it to simmer for 7-10 minutes, so the chicken is cooked through and the vegetables are soft.

  5. Remove the chicken from the sauce, pour the sauce into a blender, and blend it until smooth. Then, check for seasoning. Return the sauce to the pan, mix in the olives, and return the chicken. To serve, sprinkle some fresh chopped parsley over it and add a drizzle of extra-virgin olive oil and a small drizzle of red wine vinegar.
