I mean, who doesn't like beans on toast? But have you tried making your own? It's so easy, and with the addition of chorizo, you're in for a winner.
Ingredients
70g of chorizo sausage, diced.
1 small onion, thinly diced.
1 tsp smoked paprika.
1 tsp garlic granules.
2x cannellini beans (drained).
1 x tin chopped tomatoes.
1 tsp of brown sugar.
A splash of tabasco or as much as you can handle.
A splash of white wine vinegar.
Method
Preheat a large saucepan over medium heat for a couple of minutes, then add a nice drizzle of olive oil. Lower the heat, then add the chorizo, onions, and seasoning. Allow the onions to soften for around five minutes.
Next, add the garlic granules and smoked paprika, and let it cook for a minute before pouring in the beans. Mix well and let it cook for a minute so that the beans can absorb the flavours.
Now, pour in the tin of tomatoes, sugar, and a pinch of salt. Cover with a lid and simmer over low heat for 20 minutes.
Finally, add as much Tabasco as you like, a good splash of vinegar, and check for seasoning, adjusting accordingly. Place the mixture on top of some toasted bread rubbed with garlic, sprinkle over some fresh parsley, and add a drizzle of extra-virgin olive oil.
