CHRISTMAS PIGS IN BLANKETS TRAYBAKE

Prep Time 15 minutes - Total Time 1 hour - Serves 3-4


When you want a taste of Christmas but don’t have hours to spend in the kitchen. This is the dish you are looking for.

Ingredients

  • 12 large pigs in blankets.

  • 500g of potatoes, cut into wedges.

  • 200g of Brussels sprouts.

  • 4 carrots, leave any small ones whole and roughly chop any big ones.

  • 100g of whole-cooked chestnuts.


Dressing Ingredients

  • The juice from 2 clementines.

  • 3 tbsp of runny honey.

  • 1 tsp of Dijon mustard or whole-grain.


Method


  1. For the dressing, simply mix all the ingredients, along with a pinch of salt, then place to one side.

  2. Place all the veg into a pot of boiling water. Cook for 10 or till the veg just start to go tender, then drain.

  3. Add all the veg to a large roast tray, pour over a good drizzle of olive oil and season with salt and pepper. Pop into a preheated oven set at 180° for 20 minutes.

  4. After 20 minutes add the pigs in blankets along with the chestnuts and the dressing. Pop back into the oven for another 20 minutes or till the sausages are cooked. Once out of the oven serve with some cranberry sauce.
