EASY HOMEMADE BUTTER

Have you ever tried making your own butter?

It’s easier than you think! Ready to spread in 30 minutes.


I don’t mean buying a pack of butter, allowing it to go soft and then adding flavouring to it. Although there’s nothing wrong with that. I mean actually making the butter yourself from scratch.


All you need is double cream and whatever you want to flavour it with, for example, I like you to add Nduja. You will also need an electric mixer. Really easy, really tasty and really satisfying.

Ingredients

  • 540ml of double cream*.

  • Pinch of salt.


Recipe Note

*You can make this with any quantity of cream and the method is exactly the same, timing may vary though. However much cream you use you will get half that amount in butter.

Method

  1. Pour the cream into an electric mixer with the balloon whisk attachment and whisk on the highest setting. If you have one use the splash guard if not you will need some tea towels. As it whisks it will turn into whipped cream and start to form soft peaks. Every so often stop and using a spatula wipe down the sides. Just keep going and you’ll see the texture change again. After about 10-15 minutes you will see it separate and you will have buttermilk and butter. This is when you’ll need the splash guard or a couple of tea towels.

  2. Pour the buttermilk and butter into a colander and allow it to drain. If you have any muslin cloth place that in the calendar first. You can save the buttermilk for another recipe. Either use your hands or tightly squeeze the muslin cloth to make sure the buttermilk has drained off.

  3. To check if the butter is ready submerged in cold water. If it turns cloudy pour the water away and repeat with fresh water. Once the water is no longer cloudy the butter is ready.

  4. You can now season the butter with salt, mix and form a block of butter. Wrap in parchment paper and pop in the fridge. I like to also mix in some Nduja, this is great over grilled meat.
