HARISSA AND COCONUT CHICKEN

Looking for a quick and delicious meal that's ready in just 30 minutes? Look no further than this tasty chicken and coconut recipe!


Tender pieces of chicken are simmered in a creamy coconut sauce, infused with star anise, harissa, lime juice, onion, and garlic.


With just a handful of ingredients and minimal prep time, this dish is perfect for busy weeknights or anytime you're craving a flavorful and satisfying meal.


Ingredients

  • 1kg of diced chicken breast.

  • 1 onion, thinly diced.

  • 3 garlic cloves, minced.

  • 400ml of coconut milk.

  • 2 tsp of harissa paste.

  • 1 star anise.

  • Juice of 3 lime, plus extra for garnishing.

  • 200g tin of sweetcorn.


Garnish

  • Limes wedges or slices.

  • Fresh coriander, roughly chopped.

  • Chilies, sliced.


Method


  1. Heat a large pan over high heat until hot. Add enough olive oil to cover the bottom of the pan, then add the chicken and season with salt and pepper. Cook over high heat until golden, for around 10 minutes. If necessary, cook the chicken in batches to avoid crowding the pan.

  2. Once the chicken is cooked, remove it from the pan and set it aside. Reduce the heat to low and add another drizzle of olive oil. Add the onions and garlic, season with salt and pepper, and cook them in the oil for a couple of minutes until they soften.

  3. Return the chicken to the pan, pour in the coconut milk, add the harissa, star anise, and squeeze in the lime juice.

  4. Stir everything together and let it simmer over medium-low heat for 10-15 minutes or until the chicken is cooked through and the sauce has reduced.

  5. When done, add the sweetcorn, stir, and taste for seasoning. Garnish with lime wedges or slices, sprinkle over some fresh coriander and a few sliced chillies. This dish can be served with wedges, but it also goes well with rice.
