PEA, HALLOUMI AND ROCKET FRITTERS

Want a quick and delicious lunch? Try these pea, Halloumi, and rocket fritters! They're easy to make and so tasty. For an extra fancy twist, add a poached egg on top. Perfect for any time of day!


Ingredients

  • 200g of frozen peas, defrosted.

  • 100g of halloumi, grated.

  • 1 handful of rocket.

  • 1 handful of fresh parsley.

  • 1 tbsp of mint sauce.

  • 1 large egg.

  • 4 tbsp of flour.


Method


  1. Place all the ingredients into a food processor, season, and whiz to combine everything together. Then, mold the mixture into eight fritters.

  2. Heat a drizzle of olive oil over medium heat in a nonstick frying pan and fry the fritters in batches for two minutes on each side. Serve with some extra rocket and your favorite dip.
