PEA & SAUSAGE PASTA

So simple, so easy and quick to make, you’ll be sat down eating in 15 minutes.

As with all recipes, the key is quality ingredients, so buying the best sausage you can will make all the difference.


Sausages, mint and peas work so well together and if I would have had any at the time I would have added some toasted pine nuts. You could also add asparagus if you have any.


Ingredients

  • 200 g of pasta.

  • 6 good quality sausages.

  • ½ an onion, finely diced.

  • 1 handful of frozen peas.

  • 1 tsp of dry thyme.

  • 2 tsps of harissa paste.

  • 1 tbsp of cream cheese.

  • 30 g Feta.

  • 1 handful of fresh mint, roughly chopped.

Method

  1. Firstly, get your pasta of choice on the go. Cook according to the packet.

  2. Into a frying pan add a good drizzle of olive oil, take the sausages out of their casings, break up and add to the pan. Cook over a high heat to build up some colour and a crust. Around 2-3 minutes.

  3. Turn the heat right down to low and add the onions, thyme, harissa paste and season. Allow that to slowly cook away for 5 minutes or till the onions are tender.

  4. Next, add a few spoonfuls of pasta water to the pan, add the cream cheese, peas and mix so that it all comes together. Leave for a minute or so, so that the peas come up to temperature, the sausages are cooked through and you are left with a nice sauce. Feel free to add more pasta water if need be.

  5. By now the pasta should be ready, drain, add the pasta to the sauce, give it a good mix and check for seasoning. Stir through the mint, crumbling the feta over the top and finish off with a drizzle of extra virgin olive oil.
