PRAWNS IN AN NDUJA CREAM SAUCE

Prep Time 2 minutes - Total Time 10 minutes - Serves 2

Move over garlic prawns there’s a new cat in town and is kicking some serious arse.

Juicy prawns in a spicy cream sauce perfect for a little starter or lunch. This recipe will feed 2 or if you are like me you will eat it all yourself.

Ingredients

  • 200g of peeled raw king prawns.

  • 1 knob of butter.

  • 1 small onion or shallot, finely diced.

  • 2 garlic cloves or as much as you like, grated.

  • 1 tsp of nduja.

  • 150ml of double cream.

  • 1/2 lemon, juice only.

  • A small handful of fresh parsley, roughly chopped.

Method

  1. In a frying pan add the butter along with a splash of olive oil. Fry the onions over a low heat for 2-3 minutes then add the garlic and give that another minute.

  2. Add the nduja, mix and continue to fry for another couple of minutes. Pour in the cream followed by the prawns. Simmer for 4-6 minutes depending on the size.

  3. Once the prawns are cooked season, add the lemon juice and mix through the parsley. If you feel it’s too thick add a little splash of water to loosen it up. Serve with some bread and I like to add some chilli flakes.
