SAUSAGE & GIANT COUSCOUS

One pan, minimal effort and the kind of food that tastes even better straight out the pot standing in the kitchen.
Smoky sausages, tomatoes, garlic and giant couscous all cooked down together into something proper comforting.
This would feed 2 hungry people or 4 normally functioning adults 👊

Ingredients
• 6 sausages
• 1 onion, diced
• 3 garlic cloves, minced
• 1 red chilli (optional)
• 1 x 400g tin finely chopped tomatoes
• 200g giant couscous
• 400ml chicken stock
• 1 tsp cumin
• 1 tsp dried oregano
• Olive oil
• Salt & black pepper
Optional garnishes:
• Feta
• Fresh basil or parsley
• Extra-virgin olive oil
Method
Into a pan add a splash of oil and brown the sausages for a few minutes. You’re not looking to cook them through at this stage, just get some colour on them.
Remove the sausages from the pan then add the onion, garlic and chilli with another splash of oil. Season and cook for 5–10 minutes until softened.
Once softened add the chopped tomatoes, return the sausages and simmer gently for around 10 minutes until the tomatoes reduce slightly.
Remove the sausages again then add the giant couscous, chicken stock, cumin, oregano, salt and pepper. Mix together and return the sausages to the pan.
Pop on a lid and simmer over a medium-low heat for around 15 minutes or until the couscous is tender. Give it the occasional stir so nothing sticks to the bottom.
Once done, check for seasoning and finish with feta, a drizzle of olive oil, a sprinkle of oregano and whatever fresh herbs you’ve got lying around. I used basil because that’s what I have growing on the windowsill 👊
