Spanish Garlic Soup
This is what my dad would call Sopa de Pobre. Poor man’s soup.
A dish built from things most people already have lying around. Stale bread, garlic, water or stock and eggs.
It’s proof that sometimes the best food doesn’t come from expensive ingredients or fancy techniques, it comes from making something out of almost nothing.
This soup takes me straight back to childhood.
No measurements. No rules. Just pure instinct 👊

Ingredients
Garlic cloves (I used 4)
Stale bread
1 tbsp smoked or hot paprika
500ml chicken stock (traditionally water works too)
Eggs (I used 3)
Extra virgin olive oil
Salt
Fresh parsley (optional and not particularly traditional)
Method
Finely slice your garlic cloves as thinly as possible.
Add a generous Spanish amount of extra virgin olive oil to a saucepan along with the garlic while the oil is still cold. Turn onto a low heat.
Slowly fry the garlic until softened and just starting to take on a little colour.
Tear or slice in your stale bread, season with a pinch of salt and give everything a good mix.
Add the paprika and cook for around a minute.
Pour in the stock and mix well. I used 500ml of @the_pure_stock_co chicken stock but traditionally water works too. Leave to simmer gently for around 10 minutes.
What you do during those 10 minutes is up to you… I had a shot of @anis_del_mono 😂
After 10 minutes the bread should have broken down and thickened the soup.
Crack in your eggs and leave for a few more minutes until cooked.
If the soup feels too thick, add more stock or hot water.
Check seasoning, ladle into bowls, finish with parsley, another sprinkle of paprika and get stuck in 👊
