Prep Time: 20 minutes - Total Time: 1 hour - Serves: 4
Finger licking, spicy, sticky chicken wings perfect any time of the day or year.
2 kg chicken wings.
10 tbsps ketchup.
2 red chillies, finely chopped .
100 ml white wine vinegar.
4 tbsps of soft dark brown sugar.
4 tbsps of runny honey.
4 tbsps of sriracha.
Place the chicken in one or two roasting trays, drizzle with olive oil and season with salt and pepper. Mix and roast in a preheated oven at 180℃ for 30 minutes.
Put rest of the ingredients in a sauce pan, mix and bring up to a boil then simmer till thickened and reduced slightly. This can be done in advance.
Once the chicken is done remove the tray(s) from the oven and turn up to 200℃. Place the chicken in a bowl and pour over most of the sauce and mix well, keeping some for later. Pour out all the juices from the tray then return the chicken and roast for another 10 minutes.
Once out of the oven finish off with little more sauce and sprinkle with sesame seeds.
Make sure you have plenty of napkins, you will need them.
