Get the taste of Thailand at home with my fragrant Thai green curry paste. Its so quick to make, extremely easy and better than anything you can buy in a jar.
Next time you have the urge for a curry forget about getting a takeaway, once you have this paste in the fridge you can knock up a curry in minutes whenever your heart desires.
1 handful of fresh Thai basil, save some for garnishing.
1 handful of fresh coriander, save some for garnishing.
1 thumb size of galangal, roughly chopped (if you can’t find it use ginger).
2 echalion shallots, roughly chopped.
3-5 birds eye green chillies, roughly chopped.
4 garlic cloves, cut in half.
The juice of 2 limes.
2 lemon grass, roughly chopped.
4 fresh kaffir lime leaves.
1 tsp shrimp paste.
Place all the ingredients into a food blender and whiz to a smooth paste or using a pestle and mortar and bash to a paste. I like to add a little water to help it along.
It's that quick and that simple.
