Cooking Time 30 minutes - Serves 2
This dish is so rustic, comforting, easy and tasty. A perfect one-pot, weeknight recipe. Enjoy with a nice chilled glass of wine and rustic bread.
Ingredients
6 good quality sausages.
1 onion, diced.
1 carrot, diced.
Chilli flakes, to taste.
250ml of white wine.
A couple of sprigs of fresh rosemary, roughly chopped.
400g tin of lentils.
Method
In a nonstick frying pan, add a splash of olive oil and brown the sausages on all sides. You are not looking to cook the sausages through at this point, just getting some colour on them. Then remove them from the pan and place them on one side.
In the same pan turn the heat down to low and add another splash of oil followed by the carrots, onions, rosemary, chilli flakes and season. Continue to cook till the veg is soft, around 10 minutes.
Return the sausages to the pan and turn up the heat to high then pour in the wine. Allow to completely reduce till almost gone.
Pour in the lentils along with any tin juices, season and simmer for 10 minutes. Once done finish off with some freshly chopped parsley, a drizzle of extra-virgin olive oil, a drizzle of red wine vinegar and I also like to have it with a big dollop of aioli.
