BAKED NDUJA & CHORIZO MEATBALLS

Prep Time 5 minutes - Total Time 40 minutes - Makes 15


If you ask me chorizo makes everything taste better and this recipe is proof of that.


And there is no better combination than meatballs, tomato sauce and melted cheese. No need for a knife and fork all that is needed is some bread.

Ingredients

  • 100g of chorizo sausage, roughly diced.

  • 4 garlic cloves.

  • A few sprigs of fresh thyme.

  • 500g of pork mince.

  • 2 tsp of Nduja.

  • 1 small onion, diced.

  • 400g tin of chopped tomatoes.

  • 1 tsp of brown sugar.

  • Fresh basil.

  • Fresh oregano.

  • 1 ball of fresh buffalo mozzarella.

Method

  1. Into a food processor add the chorizo, garlic, thyme and whizz for a minute to break everything down.

  2. Place the chorizo mixture into a large bowl along with pork mince, Nduja and season. Mix everything together then form into golf size meatballs.

  3. In an oven-proof dish fry the meatballs over a high heat with a drizzle of olive oil. Brown on all sides then remove from the dish and place to one side. Should take around 10 minutes.

  4. In the same dish turn the heat down to low then add the onions with a pinch of salt. Cook the onions for a couple of minutes or till softened.

  5. Pour in the tomatoes add the sugar, season, mix and simmer for 2-3 minutes. Return the meatballs and coat them in the sauce. Sprinkle over the herbs and tear the mozzarella over the top.

  6. Pop the dish into a preheated oven set at 200° for 10 to 15 minutes or till the cheese has melted and the meatballs cooked through. Once out of the oven drizzle with a little extra virgin olive oil and get stuck in.
