CURRIED LENTILS

Cooking Time 15 minutes - Serves 2


1 tin of lentils and a few spices and you are on for a mega little dish. Cheap and easy to make and taste amazing.


Ingredients

  • 400g tin of green lentils.

  • 1 clove of garlic.

  • 1 small piece of fresh ginger.

  • 1 small onion, thinly sliced.

  • 3 tomatoes, roughly diced.

  • 1 tsp of mild chilli powered or to taste.

  • 1 tsp of turmeric.

  • 1 tsp of garam masala.


Method


  1. Warm a splash of oil over medium heat, then add your onions, tomatoes, ginger, and garlic. Season and fry over low heat for 10 minutes, so that the onions become tender and the tomatoes break down.

  2. Next, add the spice mix and cook for a minute. Then pour in the lentils, including the juices from the tin. Give it a mix and simmer over medium to low heat for five minutes, allowing it to reduce slightly then you are good to go.


I like to serve it with a dollop of yogurt mixed with some mint sauce and diced cucumber. Plus some fresh red chilies, and freshly chopped coriander. Also, make sure to make some easy flatbreads for scooping it all up.
