LEMON, HONEY & CHILLI PORK BELLY

Prep Time 5 minutes - Total Time 1 hour 20 minutes - Serves 2


Sticky, tender, spicy, sweet does it get any better than that?


This is one of my favourite mid-week meals. Stick it in the oven and forget about it while you're sorting out the kids, having a bath or just chilling on the sofa. But once out of the oven you are gifted with tender pork, that lends it’s self so well to whatever you place it with.


O yeah and an incredible ready-made dressing/sauce.


Ingredients

  • 500 g of pork belly slices.

  • 1 large lemon, juice.

  • 1 tsp of chilli flakes or to taste.

  • 5 tbsps of extra-virgin olive oil.

  • 3 tbsps of runny honey.

Method

  1. In a roasting dish place all the ingredients (including the juiced lemon) apart from the honey and mix well. Cover with tin foil and pop into a preheated oven set at 160℃ for 1 hour.

  2. Once the hour is up remove the tinfoil and drizzle with the honey. Turn the oven up to 200℃ then pop back in uncovered for 10-15 minutes or till the pork is golden.

  3. When the pork is ready I like to serve it with either rice, in a wrap or chopped up and add to a salad. But however you serve it, make sure you use some of the beautiful juices from the dish.
